Prep Notes

quick, easy and no refined sugar involved

Cooking Time

15 minutes

2 small marmalade jars or 1 big

225 gr frozen raspberries

1 tablespoon goji berries

4  unpitted dates

1 tablespoon maple syrup

1/2 lemon juice

1/2 teaspoon vanilla powder

1 1/2 tablespoons chia seeds

1 teaspoon agar agar

1 cup water

  • place the reaspberries, dates and goji berries with water in a pot and put into medium-high heat
  • let it boil for 5-10 minutes until you see some water starts to evaporate
  • then remove from the heat and add maple syrup, vanilla and lemon juice
  • mix with a hand mixer until it becomes a smooth texture (or if you like keep it with small chunks)
  • let it cool down a bit (5 min c.a.)
  • add the agar agar on the surface and replace on a medium heat, do not stir it
  • when it starts to boil wait 1 minute and then stir around with a spoon and add the chia seeds
  • remove from the heat and before it cools down place in the clean glass jars
  • lock with the leads and place the jar upsidedown until they are completly cool (this will make vacuum and save the jam for longer time)
  • enjoy as a topping for bread or pancakes, in the oat meal or however you prefer

you can always replace the raspberries and goji berries with other berries or mix different types together, just get creative and experiment!
