chai spiced pink-ish banana bread (gluten, dairy and sugar free)

Prep Time

Prep Notes

mine is pink-ish because I added beetroot, but feel free to replace it for any other veggie that you child might don't want to eat otherwise. or just skip it!

the great twist about this banana bread in my opinion is that there is no need to add any sweetener and the spices makes it sooo tasty too.

Cooking Time

40/45 minutes

1 bread form

dry ingredients:

1/2 cup buckwheat flour

1/2 cup almond flour (grind almonds yourself)

1/2 teaspoon nutmeg

1/2 teaspoon vanilla powder

1/2 teaspoon salt

1 teaspoon cardamom

2 teaspoons cinnamon

1 teaspoon ginger powder

1/2 teaspoon cloves

1 and 1/2 teaspoons baking powder

1/2 teaspoon baking soda

wet ingredients:

1 or 2 small grated beetroot

2 organic eggs

3 ripen bananas

1/4 cup softened coconut oil

1 teaspoon apple cider vinager

1/4 cup plant based milk

*a handful of walnuts or other nuts and seeds roughly chopped for the top

  • pre-heat the oven at 180°C
  • start by mixing in a large bowl all the dry ingredients except the baking soda and baking powder
  • add the baking soda and the baking powder and then add directly on top the apple cider vinager so it comes out little fizzy , that's a good sign that the baking powder is activated
  • on another bowl place all the wet ingredients except the apple cider vinager and mix with a hand mixer until a smooth texture
  • add the wet ingredients bowl slowly to the dry one and keep stirring with a wodden spoon
  • place the batter into a bread form, previously oiled (you can use coconut oil with your fingers and spread it evenly on the sides and the bottom of the form)
  • sprinkle some nuts or/and seeds on the top
  • bake it for about 40/45 minutes
  • when is evenly cooked take it out from the oven and let it cool down before moving it out from the form
  • enjoy it!

I love to cut out one slice and add a nut butter spread on top ,like peanut butter or others...yummieee
