green pancakes for happy children

gluten free (buy 100% gluten free oats if needed) and vegan, perfect if you want some tricks to add greens into your children diets

1 min each side (medium heat)

wet ingredients:

2 bananas

1 1/2 cups any plant milk you have on hand

2 tablespoons fresh squeezed orange juice

2 tablespoons maple syrup

1 tablespoon coconut oil

2 handfull of fresh spinaches (or other fresh greens)

dry ingredients:

1 cup oat flour (*do it yourself by just grinding rolled oats)

1/2 almond flour (*do it yourself by just grinding almonds )

1/2 cup buckwheat flour

1 teaspoon baking powder

2 tablespoons psyllium husks crushed

1/2 teaspoon vanila powder

1/2 teaspoon tumeric powder (optional)

1 teaspoon cardamom

a pinch of salt

some more coconut oil for the pan


  • place all the wet ingredients in a mixer or blender and mix untill you get it all smooth
  • place all the dry ingredients in a bowl and mix together with a wooden spoon
  • add the wet mixture to the bowl with the dry ingredients and mix with the spoon until smooth and soft but still thick
  • let the dough rest for about 15 min
  • place some coconut oil in a pan and start to cook your pancakes! flip them when you see bubbles on the surface.
  • enjoy with any toppings!
