super easy oat punky pancakes

10 min + 15min (for the dough to rest)

vegan, flourless (can be gluten free100%), sugar free

Cooking Time

1/2 minutes each side for each pancake (depending how large you make it)


15/20 pcs small pancakes



2 cups oats (use gluten free ones if needed)

1/2 teaspoon baking powder

2 cups coconut milk (can be replaced for other plant milks, but with this is more fatty,tasty and great for children's breakfast)

1 ripe banana

1 teaspoon vanilla powder

a pinch of salt

1 teaspoon coconut oil (for the pan)

maple syrup, fresh fruits (to serve)


  • mix the oats in a blender or hand mixer until become flour
  • in a bowl start to smash the banana with a fork until quite smooth
  • add the coconut milk and whisk together
  • add the rest ingredients and keep whisking until the dough is quite thick but smooth
  • let it rest at room temperature for about 15 min.
  • whisk again after the resting time and start to warm up the coconut oil in the pan
  • we like them small, so my measurment is a table spoon of dough each pancake, but just experiment your own version!
  • enjoy them!


We love them just with maple syrup or with our berries home made chia jam or our home made carrob spread and fresh fruits on top !
