Prep Notes

is time saving to do big quantinties at once, so it last longer .

maybe set aside some time in the weekend so the whole family can help out!

Cooking Time

50 minutes

3 big jars

500 grams rolled oats (choose gluten free if needed)

250 grams whole buckwheat

1 cup flax seeds

1 cup pumpkin seeds

1 cup sunflower seeds

1 cup coconut flakes

1/2 cup almonds (roughly chopped)

1/2 cup hazelnuts (roughly chopped)

100 grams roughly chopped dark chocolate 70% (optional)

12 tablespoons coconut oil

6 tablespoons maple syrup

4 teaspoons cardamom

2 teaspoons cinnamon

pinch of salt

  • preheat the oven at 100°C
  • place otas and buckwheat in a bowl, add salt and coconut oil and start to massage it all together with your hands
  • divide the "dough" on three trays with parchment paper under, make it flat and even
  • place it in the oven for 30 minutes
  • in the mean while use the same bowl to mix together with a spoon the rest of the ingredients
  • after the 30 minutes take out the trays and higher the oven at 200°C
  • divide the second mixture on the three trays, careful not to mix with your hands at that point the oats and buckwheat can be very hot
  • mix with a spoon so that all the "dough" get evenly the rest of the ingredients, then make it nicely flat again
  • place back into the oven for about 10 minutes but keep checking and changing the order of the trays, about every 5 minutes so it will cook evenly and no burning will happen
  • once you smell the roasted of the nuts is time to take out the trays
  • let it cool down completely, and this is important especially if you like to have crunchy big chunks of granola
  • store in the jars and enjoy at anytime as a topping, with (plant) milk/(plant) yogurt, with fresh fruits or just dry as a sneak when you need a little quick boost

you can replace almonds and hazelnuts with other nuts, add other spices or dry fruits at your own taste.

we really like to add at the end frozen dried raspberries.

the whole house will smell roasted and spicy.. yummi!
