real choco chunks cookies (not chewy), vegan and gluten free

real cookies for the family(especially italian ones like our..) , to actually deep into the tea,coffe,warm plant milk.

Yields

2 trays (around 35 cookies)

Ingredients

  • 3 cups almond flour (ground from whole almonds)
  • 6 table spoons rice flour
  • 4 table spoons buckwheat flour
  • 1 table spoon arrow root
  • 1/2 cup maple syrup
  • 1/2 cup coconut sugar
  • 6 table spoons aquafaba or water from black beans (http://aquafaba.com/)
  • 4 table spoons coconut oil
  • 1 teaspoon bicarbonate
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla powder
  • 1 tablespoon flax seeds
  • pinch of salt
  • 3/4 cup vegan dark chocolate chunks

Directions

mix everything in one bowl.

the dough might result quite sticky, no worries, let it sit in the fridge, covered, for 15 minutes.

in the meanwhile turn the oven on 180°.

take the dough from the fridge and start to take a piece from it and make a ball into your hands and then flatten it between your palms.

keep doing it for the whole dough. try to make similar sizes. the dough is sticky but again.. no worries.

place the cookies on parchment paper on oven trays, try to make some space between one another.

put in the oven for 10/15 minutes until they golden then take the trays out and flip the cookies on the other side.

bake for another 10 minutes. carefull that they don't turn brown/burned.

when ready take them out and let them cool down away from the warm oven trays.

store in a glass jar.
